Healthy HomeMade Chocolate
Made this chocolate for Mom yesterday, and gave it to her today. Was concerned it might be a bit bitter for her taste, but she gobbled it all up – I bet its because of the rum flavoring! 🙂 I’d been reading again recently about some of the remarkable improvements or outright recoveries experienced by dementia patients with the consumption of coconut oil (recommended 3 tbsp per day for this purpose, but work up to that dose slowly to avoid stomach upset). I’d tried mixing coconut oil into her food in the past, but could never get her to consume enough of it because if I put too much oil…

Mrs. P’s Blueberry Crumble
Mrs P’s Blueberry Crumble My mother-in-law (Mrs P) dictated this recipe to me Boxing Day morning 2003, she and mom having stayed over for Christmas. This was a favorite recipe of hers for a long time, and I always enjoyed the warm yummy goodness of this dessert whenever she’d make it for us. Entered into my recipe book on Feb 8 2004 1 c sugar 1 c flour 1 c oatmeal 1 c margarine blueberries (ask Mrs P how much, roughly… I’m estimating 3-4 cups) or other fruit Bird’s Custard Sugar (Brown Sugar?) lemon juice Mix first 4 ingredients together in a bowl until crumbly. Divide blueberries into 4 separate…

Homemade Tomato Sauce from Scratch
Homemade Tomato Sauce – With Fresh Tomatoes! Better & Healthier than Canned A recipe I found on one of my late night dates with Pinterest when staying at Mom’s to care for her in the summer of 2013. The tomatoes from the garden were starting to over ripen so I went looking for a tomatoes sauce recipe I could make with them. Made this Oct 15, 2013 and Chris and I enjoyed a late supper in the dining room with this over rice pasta (we were on a serious streak of clean eating) and a “splash” of red wine on our glasses. Dimmed the lights and ate by candlelight listening…

“Fat Boy Chili” Recipe
“Like” Junior’s Chili in Winnipeg My mom worked at Junior’s on Henderson Highway from the day they opened their doors in the late ’70s and for several years thereafter, and we lived just across Henderson on Martin Avenue. I used to sit in Junior’s after school, doing my homework as I waited for her to finish her shift. I grew up eating this stuff. The two Greek cooks – Billy and Savas – were very fond of me, and would always insist on feeding me. I remember there was a big scandal going on behind the scenes when a former employee at Junior’s and good friend of the owner left,…

Curried Coconut Chicken
Made this a couple of weeks ago. Really, really good. A definite keeper. And quite quick and easy too : ) 1 tbsp coconut oil 2 small onions, chopped 2 garlic cloves, minced 3/4 tsp grated fresh ginger (less than 1/4 tsp ground because tsp fresh grated = 1/4 tsp dry ground) 3-4 boneless, skinless chicken breasts (original recipe called for skinless chicken thighs, I altered it to make it healthier) 2 tbsp curry powder 3-4 heaping tbsp raisins or chopped dates (If using dates, you’ll need about 8 – soak in 1/4 c water before hand) 1 (14 oz/ 400 ml) can coconut milk juice from 1/2 a…

Auntie Bea’s Seeded Wholemeal Muffins
One word: Yummy!!! In a super-healthy way! Auntie Bea made these for us when we met her for dinner at the Villa a couple weeks back. I packed on a couple extra pounds after polishing these off over the course of a couple days – I’m super sensitive to carbs! But at least they were super healthy high fiber carbs and I’m back on the straight and narrow again. I will only allow myself to have these infrequently, as good as they are, otherwise I WILL EAT them, and gain carb weight. So goooood. 1-3/4 cups (425 mL) whole wheat flour 1/2 cup (125 mL) all-purpose flour 2 tbsp (30 mL) packed dark brown sugar…

Hearty Italian Meat Sauce
Hearty Italian Meat Sauce This is another recipe that has been with me for about as long as I’ve been cooking. It’s a favorite around here, and makes it onto our dinner table frequently. I usually serve it on top of spaghetti, rigatoni, or medium size pasta shells, but you can serve it with your favorite type of pasta. A word of caution, however – this is a heavy sauce, so it isn’t recommended for especially delicate pastas such as Angel Hair. Just add a tossed or Caesar salad and a slice of garlic toast and enjoy Italian eating at it’s best! 2 Tbsp. olive oil 1/3 c. chopped onion…

Turkey Meatballs With Optional Chutney Sauce
Haven’t tried this yet, but intend to do so shortly. Cook either by baking in oven, frying in coconut oil (use least amount of oil possible), or in microwave at 70% for 7 – 13 minutes…
